Chicken Parmesan with Roasted Baby Potatoes and Passata
What to add to your trolley

- 4 chicken fillets (about 500g) 
- 1 1/2 cups Italian passata 
- 1 cup grated Parmesan cheese 
- 500g baby potatoes (halved) 
- 2 cloves garlic (minced) 
- Olive oil 
- Salt and pepper 
- Fresh basil (optional for garnish) 

How to prepare the deliciousness 

1. Prepare the Potatoes:     - Preheat youroven to 200°C. Toss the baby potatoes in olive oil, salt, pepper, and   minced garlic. Spread them on a baking tray and roast for 25-30 minutes or until golden brown and crispy. 

 2. Cook the Chicken: - Season the chicken fillets with salt and pepper. Heat a little olive oil in a pan and cook the fillets on medium heat until golden on each side. 

 3. Simmer in Passata:   - Pour the Italian passata into the pan with the chicken fillets. Let it simmer for 10-12 minutes, until the chicken is cooked through and the sauce thickens. 

4. Add Parmesan: - Sprinkle the grated Parmesan cheese over the chicken fillets in the pan, then cover and let the cheese melt over the chicken for about 2 minutes. 

5. Serve: - Serve the cheesy chicken fillets with the roasted baby potatoes on the side. Garnish with fresh basil.
