What to add to your trolley:

  • 500g Chicken Mince 
  • 2 cups finely chopped soft cooked Broccoli 
  • ½ cup crumbled Feta cheese 
  • 1 ½ cup shredded Mozzarella/Cheddar cheese 
  • 1 Egg 
  • ¾ cup Breadcrumbs (or almond flour for low-carb) 
  • 2 cloves Garlic, minced 
  • ¾ cup finely chopped Onion 
  • 1 teaspoon dried Oregano 
  • ½ teaspoon Paprika 
  • Salt & Black Pepper to taste 
  • 1 tablespoon Olive Oil (for baking or frying)


How to prepare the deliciousness:

1. Prep the Ingredients:

Preheat the oven to 200°C (400°F) if baking. Cook and finely chop the broccoli so it mixes well into the mince. Crumble the feta and shred the mozzarella or cheddar.

2. Mix the Meatball mixture:

In a large bowl, combine chicken mince, broccoli, feta, shredded cheese, egg, breadcrumbs, garlic, onion, oregano, paprika, salt, and pepper. Mix well until evenly combined. If the mixture is too wet, add a little more breadcrumbs.

3. Make the Meatballs:

Roll the mixture into the required size balls. Place them on a baking sheet lined with parchment paper or a greased tray. (You can also flatten the meatballs and use it as patties/sliders for a delicious chicken burger).

Option 1:  Bake

Lightly brush the meatballs with olive oil. Bake at 200°C (400°F) for 20 - 25 minutes until golden brown and cooked through. 

Option 2: Pan-fry 

Heat 1 - 2 tablespoons of olive oil in a skillet over medium heat. Cook the meatballs for about 4 - 5 minutes per side, turning occasionally, until they are golden brown and fully cooked.

4. Serve and Enjoy:

Serve warm with yogurt dip or a side of salad. Garnish with fresh parsley for extra flavour.
