What to add to your trolley:

  • 100g smoked salmon shavings 
  • 1 ripe avocado, diced 
  • 1 cup mixed greens 
  • 1/4 cucumber, thinly sliced 
  • 1/4 cup cherry tomatoes, halved 
  • 1/4 cup cooked quinoa or brown rice 
  • 1 tbsp capers (optional - extra flavour) 
  • 1 tbsp olive oil 
  • 1 tsp lemon juice 
  • Salt and pepper to taste 
  • Fresh chives, chopped, for garnish
  • Optional: a drizzle of balsamic glaze for a sweet touch


How to prepare the deliciousness:

1. Prepare the Salad Base:

In a bowl, combine the mixed greens, diced avocado, sliced cucumber, cherry tomatoes, and quinoa or brown rice. Toss gently to mix.

2. Add Salmon Shavings:

Arrange the salmon shavings on top of the salad mixture.

3. Dress the Salad:

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle this dressing over the salad and salmon.
