What to add to your trolley:

  • 2 cups cooked chickpeas  
  • 1 cup cherry tomatoes, halved 
  • 1 cucumber, diced 
  • 1 small red onion, finely chopped 
  • 1 bell pepper (any color), diced 
  • ½ cup crumbled feta cheese 
  • ¼ cup Kalamata olives, halved 
  • 2 tablespoons chopped fresh parsley

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar (or lemon juice)
  • 1 teaspoon Dijon mustard 
  • 1 clove garlic, minced 
  • ½ teaspoon dried oregano 
  • Salt and pepper, to taste

How to prepare the deliciousness:

1. Prepare the Salad

Combine the cooked chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, olives, and parsley.

2. Make the dressing:

Whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper.

3. Toss the Salad:

Pour the dressing over the salad and toss gently to combine.

4. Serve:

 Let the salad sit for 10-15 minutes to allow the flavours to meld. Serve as a main dish or a side.
