What to add to your trolley:

  • 2 cups whole meal flour
  • 1 cup all-purpose flour/more whole meal flour
  • 1 tbsp baking powder
  • 1 tsp bicarb
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup cheddar cheese, grated
  • ¼ cup mixed fresh herbs, finely chopped (parsley, chives,  rosemary, thyme, or a combination)
  • 1 ½ cups buttermilk
  • 1 large egg
  •  ¼ cup olive oil

Optional: Extra herbs/cheese for sprinkling on top

How to prepare the deliciousness:

1. Preheat the Oven:
Preheat your oven to 180°C (350°F). Grease and line a loaf pan or use a non-stick one.

2. Mix the Dry Ingredients:
Combine the whole meal flour, all-purpose flour, baking powder, bicarb, salt, and sugar. Stir in the grated cheddar cheese and chopped fresh herbs.

3. Prepare the Wet Ingredients:                                              In a separate bowl, whisk together the buttermilk, egg, and olive oil until well combined.

4. Combine and Mix:                                                            Pour the wet ingredients into the dry mixture. Gently fold the ingredients until just combined (do not overmix; it’s okay if it looks a bit lumpy).

5. Transfer to the Pan:                                                       Spoon the batter into the prepared loaf pan and spread evenly. If desired, sprinkle some extra herbs and cheese on top for added texture and flavour.

6. Bake:                                                                                  Bake in the preheated oven for 40-50 minutes or until a toothpick inserted into the center comes out clean. The top should be golden brown, and the bread should sound hollow when tapped.

7. Cool and Serve:                                                                Allow the bread to cool in the pan for about 10 minutes before turning it out onto a wire rack. Slice and enjoy warm or at room temperature.

Tips:

Add-ins: Feel free to add chopped olives, sun-dried tomatoes, or even a hint of garlic for extra flavour.

Storing: Wrap tightly and store at room temperature for up to 2 days or refrigerate for longer freshness. This Savoury bread is quick to put together and makes for a delicious, hearty addition to any meal!
