What to add to your trolley:

  • 1 large egg yolk (room temperature)
  • 1 cup avocado oil (or olive oil)
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice (or vinegar)
  • 1/4 tsp salt
  • Optional: 1/4 tsp garlic powder or a pinch of cayenne for extra flavour



How to prepare the deliciousness:

  1. Whisk the Egg Yolk:
    In a mixing bowl, whisk the egg yolk and mustard together until smooth. This will help emulsify the mixture.

  2. Slowly Add the Oil:
    VERY slowly add the avocado/olive oil, drop by drop at first, while whisking continuously. This is key to creating a thick, creamy mayonnaise. After you’ve added about 1/4 cup of the oil and the mixture begins to thicken, you can start adding the oil in a slow, steady stream.

  3. Add Lemon Juice and Seasonings:
    Once the oil is fully incorporated and the mayo is thick, whisk in the lemon juice (or vinegar) and salt. Taste and adjust the seasoning as needed. For added flavour, you can stir in garlic powder or a pinch of cayenne.

  4. Store and Use:
    Transfer your homemade mayo to a jar or airtight container and refrigerate. It will keep fresh for up to a week.
