What to add to your trolley:
1. Marinate the Chicken:
In a bowl, whisk together the Olive oil, Lemon juice & zest, Garlic, Rosemary, Thyme, Paprika, Salt, and Pepper. Pat the chicken drumsticks dry and place them in a large Ziplock bag or bowl. Pour the marinade over the chicken, mix well, and marinate for 30 minutes to 2 hours (or overnight for more flavour).
2. Roast the Chicken:
Preheat oven to 200°C. Arrange the marinated drumsticks on a lined baking tray. Roast for 35 – 40 minutes, flipping halfway, until golden brown and cooked through. For crispier skin, grill on high for the last 5 minutes.
3. Serve and Enjoy:
Serve with cauliflower mash, zucchini noodles, or a crisp salad.
