What to add to your trolley:

  • 1 kg Beef Chuck, cut into chunks
  • 3 tbsp Olive Oil
  • 1 large Onion, chopped
  • 3 Garlic cloves, minced
  • 4 Carrots, sliced
  • 4 Potatoes, diced
  • 2 Green Peppers, chopped
  • 2 Baby Marrows, sliced
  • 2 cups Green Beans, trimmed
  • 2 cans (800g) diced Tomatoes
  • 5 cups Beef Broth
  • 1.5 tsp dried Thyme
  • 1.5 tsp Paprika
  • Salt & Black Pepper to taste
  • Fresh Parsley, chopped (for garnish)

How to prepare the deliciousness:

1. Prepare the Chuck:

Heat olive oil in a large pot over medium-high heat. Sear the chuck until browned on all sides. Remove and set aside.

2. Sauté Aromatics:

In the same pot, sauté onions and garlic until fragrant. Add carrots, potatoes, and bell peppers. Cook for 5 minutes, stirring occasionally.

3. Add the Beef:

Return beef to the pot and add diced tomatoes, beef broth, thyme, paprika, salt, and pepper. Stir well.

4. Simmer the Stew:

Bring to a boil, then reduce heat to low. Cover and simmer for 2 to 2.5 hours, stirring occasionally. Add baby marrows and green beans in the last 30 minutes of cooking. Adjust seasoning if needed.

5. Serve:

Serve hot, garnished with fresh parsley. Pairs perfectly with crusty bread or steamed rice!
